Cooking for one person
If you live alone, you may very likely not enjoy just cooking for yourself, so you might throw a canned soup in a pot and heat it. Yet just because it's only you eating the meal, your body demands nutrition and a good combination of starch, meat and vegetables.
You do not have to fix something elaborate. Fix a salad that can stretch for a couple days. Make a nice, meat and vegetable soup that will last several lunches. Make a simple quick bread that can be on hand for you.
There was one elderly lady I knew who would buy a chicken, some vegetables and some bread, prepare it one day just the way she wanted it, and store the leftovers in the refrigerator or freezer so she could have it for the next couple of meals!
